Fall Baking

Now that the weather has cooled down and turning on my oven no longer makes the kitchen feel like a sauna, I've been spending a lot more time in there.

Every year for labor day we make our annual Apple Orchard trip and come home with tons of apples, so that has been my project the last couple of weeks. Find ways to use about 100 apples!
My favorite thing to make is apple butter.

Crock Pot Apple Butter
Approximately 3 lb. apples
3 cups sugar
2 tsp. cinnamon
1 tsp. nutmeg
1/2 tsp. allspice
1/2 tsp. cloves
Dash of salt
3/4 cup water or fresh apple cider
Fill Crock-pot 3/4 full with peeled, cored and sliced apples. Add the remaining ingredients and stir until evenly mixed. Cover and cook on low setting overnight or until the butter is of a thick, spreadable consistency. If apple butter has too much liquid, remove lid and cook on high until thickened. Stir often as butter thickens to prevent scorching.
Mmmmm, and apple pie of course was the other thing I made.
Vanilla bean ice cream on the side....nom nom nom!

So that's what I have been up to since the weather is cooling down finally.  How about you?

  7. Yep - just finished canning another 100 pints of homemade salsa, so now it's time for apples! This looks soo good! Do you freeze it in the canning jars? Or just refrigerate it?

Thank you so much for this recipe, Nicki! I'll be making some next week! :)
